From Dance to Dough: Burak’s Vegan Çiğ Köfte, the Snack That Sparks Stories

Burak’s Vegan Çiğ Köfte

Ingredients:
2 cups fine bulgur
1 onion, grated
1 tbsp tomato paste
1 tbsp pepper paste
1 tsp isot pepper
1 tsp cumin
Salt to taste
uice of 1 lemon
Fresh parsley, chopped

1 - Soaking Bulgur **Add warm water** to bulgur. Let it soak until soft.
2 - Mixing the Base **Add grated onion, pastes, and spices.** Mix thoroughly.
3 - Kneading **Knead by hand** for 10–15 minutes until sticky and smooth.
4 - Adding Herbs **Mix in parsley and lemon juice.** Adjust seasoning.
5 - Shaping **Form into oblong shapes** using hands.
Use gloves for kneading. Good pepper paste makes a difference. Play music while cooking! Let flavors marry. Serve with lettuce wraps.
