Kısır (Turkish Bulgur Salad)

Kısır; a refreshing bulgur salad with tomato paste; olive oil; and herbs.

Ingredients:

• 2 cups fine bulgur
• 1 ½ cups hot water
• 3 tablespoons tomato paste
• 1 Turkish tea glass olive oil (about 100 ml)
• Juice of half lemon
• 1 onions
• ½ bunch parsley, lettuce
• 1 carrot (optional)
• Salt, red pepper, cumin, black pepper

• 2 cups fine bulgur
• 1 ½ cups hot water
• 3 tablespoons tomato paste
• 1 Turkish tea glass olive oil (about 100 ml)
• Juice of half lemon
• 1 onions
• ½ bunch parsley, lettuce

Steps for

Kısır (Turkish Bulgur Salad)

1. Place the bulgur in a large bowl; pour hot water over it; cover; and let it rest for 10 minutes.
2. Once the bulgur softens; add the tomato paste and olive oil.; Mix well.
3. Add finely chopped spring onions; parsley; mint; and other vegetables.
4. Season with salt; spices; and lemon juice.
5. Mix everything thoroughly and serve.
