Hünkar Beğendi
Classic eggplant beğendi with sautéed meat on top; rich and comforting.
Ingredients:
Beğendi part:
4 grilled eggplants
2 tablespoons butter
2-3 tablespoons flour
2 cups milk
100 grams kaşar cheese
Nutmeg
black pepper
salt
meat sauté part:
400 gr boiled cubed meat (beef or lamb)
1/2 onion
1 pepper
1 capia pepper
1 tomato
1 tablespoon tomato paste
Olive oil
Black pepper
chili pepper
cumin

Prepare bechamel sauce; add grilled eggplant and cheese and spices for the beğendi.; Fry the onion; pepper and capia pepper.; Add tomato and tomato paste.; After the tomatoes are cooked add meat and spices.
