İslim Kebabı – Wrapped Eggplant with Meat
Wrapped eggplant, stewed meat, and a single toothpick holding it all together — this dish is as theatrical as it is delicious. A homey kebab for those who love a layered bite.
Ingredients:
4 eggplants
300g lamb cubes
1 onion
2 tomatoes
2 green peppers
1 tbsp tomato paste

Steps for
İslim Kebabı – Wrapped Eggplant with Meat
All vegetables are washed. They are peeled as stripes shape. They are then cut to 3-4 slices longitudinally. Then we keep the eggplants in salty water for 15-20 minutes. After we dry to eggplants with paper towel (or something like that), we put them on a pan that we previously started heating the 1 glass oil. We start cooking each of the eggplant pieces.
Preparing the meat;
We cut the onions to small cubes. We add 1/4 glass of oil to a pan and add the onions and then start the heat. After the onions are roasted, we add the meat in it. After 15-20 minutes of cooking, we add the red pepper and black pepper to the pan and mix the mixture in the pan.
For the sauce;
Tomato sauce and salt are added together. Then 2 glasses of hot water is added to them. The sauce is mixed and ready to pour on top of the tray.
Once the eggplants are ready, we put 2 slices on top of each other in a plus shape in a small bowl. After that, we put the meat mixture in eggplants and fold the sides of the eggplants (four side of the plus shape). Then, we add sliced tomatoes and peppers on the eggplant and stick a toothpick to each eggplant slice pairs. Then, we place them on the baking tray. After we prepare all the eggplants with meat mixtures, we pour the sauce on them. Then we put the tray in the pre-heated oven for 35-40 minutes on 180 degrees celcius. The dish is ready to be served.
