Steps for

Katıklı Dolma – Stuffed Zucchini with Bulgur and Meat

1. Prepare the Filling:
In a large mixing bowl, combine the ground meat, fine bulgur, finely chopped onion, dried basil, black pepper, red pepper flakes, and salt.
Mix well and gradually add a small amount of water to help bind the ingredients. Knead thoroughly until the mixture is well combined and slightly sticky.
2. Prepare the Zucchinis:
Wash the zucchinis and cut them into 2 cm thick rounds.
Carefully hollow out each round from one side to create a cavity for the filling.
3. Stuff the Zucchinis:
Fill each zucchini round with the prepared meat and bulgur mixture, packing it tightly.
4. Cook the Stuffed Zucchinis:
Arrange the stuffed zucchini rounds in a large pot.
Pour over more than a glass of water mixed with a teaspoon of salt.
Cover with a lid and cook over medium heat for about 25 minutes or until the zucchinis are tender and the filling is cooked through.
5. Prepare the Yogurt Sauce:
In a small bowl, combine yogurt and minced garlic. Whip until smooth.
6. Prepare the Chili Oil:
In a small pan, heat a little butter or olive oil.
Add a teaspoon of red pepper flakes and sauté briefly until aromatic.
7. Serve:
Place the cooked stuffed zucchinis on a serving dish.
Drizzle with the garlic yogurt and then spoon over the chili oil.
Serve warm and enjoy!
