Recipe for

Meyhane Pilavı – Bulgur Pilaf with Spices

This is one of those dishes that doesn't need to be flashy — just well made, and made often.

Ingredients:

1 cup coarse bulgur
1 onion
1 tomato
1 green pepper
1 tbsp tomato paste
Red pepper
Black pepper
Coriander
Salt
Olive oil

Steps for

Meyhane Pilavı – Bulgur Pilaf with Spices

1. Put the oil in a pan and start the stove.
2. Add the finely chopped onion and chopped green pepper.
3. Sauté until partially fried.
4. Add the bulgur and stir.
5. Add tomato sauce, red pepper, salt and mix.
6. Add chopped tomato and stir.
7. Add 2 glasses of hot water.
8. Smash the coriander seeds and add them to the pan.
9. When it starts boiling, lower the heat.
10. Cook until there is no water left.
11. Taste and check if the bulgur is soft. If not, add a little more water and continue cooking until soft.
12. Once the bulgur is soft and the water has evaporated, remove from heat. The dish is ready.
