Şehriyeli Pirinç Pilavı (Rice Pilaf with Orzo)

No Turkish table is complete without pilav, and this version — with golden orzo toasted in butter — is the classic everyone grew up on. Simple yet essential, it balances hearty mains with its soft, nutty flavor. Each household does it slightly differently; this one may surprise you with a tiny tweak that brings back someone’s childhood.

1 cup white rice (baldo or long grain), rinsed well
2 tablespoons orzo (şehriye)
2 tablespoons butter and olive oil
2 cups water
Salt to taste

Steps for

Şehriyeli Pirinç Pilavı (Rice Pilaf with Orzo)

1. In a pot, melt butter and lightly brown the orzo until golden.
2. Add the rinsed and drained rice. Stir and sauté for 1–2 minutes.
3. Add water and salt. Stir once.
4. Cover, reduce heat to low, and simmer until the water is fully absorbed (10–12 min).
5. Remove from heat. Let it rest, covered, for 10 more minutes. Fluff with a fork before serving.
