Recipe for
Sigara Böreği (Crispy Cheese-Filled Pastry Rolls)
Crisp on the outside, creamy on the inside, Sigara Böreği is everyone’s favorite tea-time or meze treat. Filled with tangy cheese and herbs, rolled like a cigar, and fried to perfection — it’s a snack with serious nostalgic power. Some hosts add unexpected fillings or fry it in oil passed down from family rituals.
Ingredients:
6 sheets of yufka or 12 sheets of phyllo (cut in triangles)
200 g white cheese (like feta or lor peyniri), crumbled
1 small bunch parsley, chopped
Olive oil or sunflower oil (for frying)
Water (to seal the rolls)

Steps for
Sigara Böreği (Crispy Cheese-Filled Pastry Rolls)
Mix cheese and parsley in a bowl.
Cut yufka into triangle-shaped slices (like pizza slices). If using phyllo, use 2 sheets per roll for strength.
Place a spoonful of filling at the wide end of each triangle. Fold in the sides, then roll tightly into a cigar shape. Seal the end with a little water.
Heat oil in a shallow pan over medium heat.
Fry rolls until golden and crispy, turning frequently.
Drain on paper towels and serve hot!
