Yayla Soup (Turkish Yogurt Soup)
Light yogurt soup with rice and mint butter; comforting and tangy.

½ cup rice
5 cups water
1 cup yogurt
1 tablespoon flour
1 egg

Yayla Soup (Turkish Yogurt Soup)
1. Cook the rice; In a small pot; bring 5 cups of water to a boil.; Add the washed rice and cook over medium heat until the rice is soft.; 2. Prepare the yogurt mixture; In a separate bowl; whisk together the yogurt; flour; and egg until smooth.; 3. Combine carefully; Gradually add some of the hot rice water into the yogurt mixture to warm it up.; Then slowly pour the mixture into the pot while stirring continuously (to prevent the yogurt from curdling).; 4. Adjust consistency and season; When the soup starts to simmer; add salt.; If it’s too thick; you can add a little hot water to reach your desired consistency.; 5. Prepare the mint butter; In a small pan; melt the butter (or heat olive oil).; Add the dried mint (and red pepper flakes; if using) and sauté for about 10 seconds.; Remove from heat.; 6. Serve; Drizzle the mint butter over the soup before serving; or swirl it in for extra flavor
